Arugula Salad with Parmesan
Ingredients
2 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice
Salt and freshly ground pepper
One bunch of arugula, thick stems discarded
1 cup cherry or grape tomatoes, halved
1/4 cup Parmesan cheese shavings
Directions
In a large bowl, combine the olive oil with the lemon juice and season with salt and pepper. Add the arugula, tomatoes, Parmesan cheese shavings and toss thoroughly.
